Turkey & Rice Soup

After a few weeks hiatus from cooking on Sunday’s I am back with my crock pot!  I was flipping through my cook book and I didn’t have enough ingredients to do anything and I’m sticking to Frugal February. So I simply decided to make a soup with whatever I had on hand and voila! My Turkey & Rice Soup.


  • 2 onions, chopped
  • 3 carrots, chopped
  • 2 green peppers, chopped
  • 2 turkey drumsticks
  • 3 cups vegetable broth
  • 3 cups water
  • 2 cups brown riceIMG_0079
  • 1 tsp thyme
  • 1 bay leaf
  • 1 tsp salt
  • 1 tsp pepper


IMG_0081In slow cooker combine onion, carrots, green pepper, salt, pepper, thyme and bay leaf, Whisk in water and vegetable broth. Add turkey legs.

Cover and cook on low until turkey is tender. 6 hours. After 6 hours added in rice. Cook for another 2 hours.



I created my lunches for the entire week (and also Sunday night’s dinner)! Also, it tasted delicious. The turkey fell right off the bone and it was extremely filling. A perfect soup for the winter!
